Spiced Potato Cakes

A quick breakfast recipe – that I cooked for tea – from Rukmini Iyer’s India Express cookbook. 

This book has more of an Asian theme with mostly vegetarian recipes. Spiced Potato Cakes with Fried Eggs and Chilli Butter ended up taking me 84 mins, not the suggested 50, but that’s okay. Got to use my new oil brush. Simple pleasures. One thing I don’t own is a potato masher, but a wooden spoon pretty much sufficed. Made the cakes a bit crumbly though, falling apart when frying.
