Mum pointed out that this is one of the easiest (and tastiest) recipes in the Hairy Dieters cookbook, from the
Hairy Bikers. So I figured I’d give it a go.
She was right. Titled ‘Very Easy Thai Chicken and Coconut Curry,’ I bashed through it in under an hour and it supplied a big batch for future meals. Supermarket peppers come in packs of 3, so I added an extra in from the 2 it asks for, and I may have added more of other amounts, but it all came out well.
